How it all began…

Palace Culture got started in the Parmigiani family kitchen in Crystal Palace. Due to his 4-year-old son’s dairy intolerance, Mirko Parmigiani made it his mission to create a delicious dairy-free cheese for the family to enjoy. Combining his love for flavour with a deep passion for health and sustainability, he began making fermented nut-based cheeses.

Using cashews & almonds, we soak our nuts in water before fermenting with live cultures. This gut-healthy base is combined with sea salt & a mix of herbs and spices to create flavour-packed nut based cheeses.

Kimcheeze

Our Kimcheeze has a semi-soft, velvety texture. Crafted with fermented cashew nuts, kimchi brine and live cultures, then rolled in Gochugaru red chillies for a fiery, tangy heat.

The Goat

The Goat has a semi-soft, creamy texture. Made with fermented cashew nuts, almonds and live cultures, this mould-ripened cheeze is tangy and smooth.
